Going 'Green'- With Glory Foods!

Chef Dee Lennox is back in the Balancing Act's kitchen to share her favorite Southern-style recipes. Not only are they delicious, they're nutritious!

From "earth to plate" is a trend that is gaining popularity across the country based on the concept that fresh ingredients make for a healthier, more nutritious meal. If you don't have your own vegetable garden, Chef Dee has the solution: Glory Foods® Collard Greens. Sold in the grocery store, these fresh greens come in a bag, already prewashed and pre-cut. The convenience of quick meal solutions really appealed to our staff, but the flavor and nutrition are the ultimate attributes. As Chef Dee demonstrates with her collard greens recipes, Southern-style comfort food is also a good source of vitamins A, B, C and fiber.

Go "green" at your next meal!

Fresh Garlic Greens
Serves: 4-6

16 oz. bag Glory Foods® "Fresh" Greens
4 Tbsp. Vegetable oil
2 Tbsp. (2 or 3 lg. cloves) Garlic, minced
Salt and pepper, to taste
Glory Foods® Hot Sauce, to taste

1. Place Glory Foods® "Fresh" Greens in a large pan and add enough water to cover.
2. Bring to boil, reduce heat and let simmer until tender.
3. Drain off all of the water and reserve the hot greens.
4. In a large skillet, slowly cook garlic in the vegetable oil until garlic begins to brown.
5. Add the drained Glory Foods® "Fresh" Greens, season with salt and pepper, then add a few dashes of Glory Foods® Hot Sauce.

Collard and Sausage Soup
Serves: 10-12

1 27 oz. can Glory Foods® Collard Greens
1 Tbsp. Olive Oil
1 cup Yellow onion, diced 1/4"
2 cloves Garlic, minced
2 ea. Potatoes, peeled and diced 1/2"
2 cups Chicken stock
1/2 lb. Italian sausage, cooked and sliced 1/4" thick

1. Place olive oil in a saucepan over a low flame.
2. Add the onions and garlic, and cover. Cook until translucent, stirring occasionally. Make sure garlic and onions do not burn.
3. Add potatoes and all remaining ingredients. Simmer for 15 to 20 minutes, or until potatoes are tender.
4. Serve hot.
