– It’s pronounced Keen-Wha
– It’s actually a seed, and is commonly grouped with grains such as wheat — but is a member of the     same food family as spinach and beets!
– Contains all 9 essential amino acids – making it a complete protein
– Scientific evidence dates quinoa back to about 3000 B.C.

Many people are afraid to try Quinoa, but with 4 different pre-seasoned varieties to choose from, there is something for everyone!

Try this recipe tonight! Poblano Peppers Stuffed with Southwest Quinoa:

1 – 10oz bags of Path of Life Southwest Quinoa
Chorizo Crumbles
½ cup – refried beans
½ cup – shredded cheddar cheese
¼ cup – warm water
5 Poblano peppers
Enchilada Sauce
Fresh Cilantro

1. Preheat oven to 400 degrees
2. Pour a little of the sauce onto the bottom of each pan
3. Place pan in oven uncovered for approx. 15-25 min, until stuffing is hot
4. Heat the rest of sauce
5. Place stuffed peppers on serving plate
6. Pour warm sauce over the peppers

7. In a mixing bowl add POL SW quinoa
8. Mix in cooked(room temp or cold) chorizo crumbles
9. A little bit of canned refried beans to bind
10. Mix in shredded cheddar cheese
11. Add a touch of warm water
12. Mix all ingredients together until it the mixture can form a ball, if it does not form a ball(too dry)….you can add more beans or water to help bind
13. Cut poblanos in half lengthwise, remove stem and seeds
14. Fill the halves with chorizo, cheese and quinoa filling
15. Place in freezer for a few minutes to set or over night
16. Cook from frozen in a baking dish with a little red enchilada sauce
