Light Chocolate Mocha Brownies
• 2/3 cup - all-purpose flour
• 1/4 tsp. - baking powder
• 1/2 tsp. - salt
• 1 1/4 cups - vegetable oil
• 1/2 cup - unsweetened cocoa powder
• 1 cup - Domino® Light
• 2 Tbsp. - instant decaf coffee granules
• 4 - large eggs
• 1 tsp. - vanilla extract
• 2 cups - semi-sweet mini chocolate chips
• 1/2 cup - coarsely chopped walnuts or pecans (optional)
Preheat oven to 350°F. Grease a 13x9x2-inch baking pan and set aside. In a medium-sized bowl, add flour, baking powder and salt; set aside.
In a large bowl, add oil, cocoa powder, Domino® Light and coffee granules; stir until combined. Using an electric mixer on low speed, add eggs one at a time, scraping down the sides of the bowl with each addition. Slowly add in the flour mixture until fully incorporated. Stir in vanilla, chocolate chips and nuts. Spread batter into prepared pan and bake for 30-35 minutes or until the brownie edges begin to pull away from the sides of the pan, and brownies begin to crack slightly; do not under bake. Cool completely in pan before cutting and removing brownies. Yields approximately 2 dozen brownies.
