PINEAPPLE SALSA
Serve this tasty pineapple salsa with grilled or broiled fish, chicken, or pork.

Combine all ingredients; cover and refrigerate for an hour or more to blend flavors. Serve with grilled or broiled fish, chicken, or pork. Makes about 1 1/3 cups.
PICNIC POTATO SALAD
This salad is delicious with just about anything grilled, and always tastes best outdoors!

Preparation:
Combine potatoes, egg, onions, and celery. Stir in mayonnaise, mustard, and salt and pepper to taste. (Stir the mayonnaise and mustard in a little at a time, until you have the flavor and consistency you like.) Top with thinly sliced tomatoes and cucumber, if desired. Serves 6 to 8.
MEMPHIS STYLE BARBEQUE SAUCE
This is a flavorful sauce, on the sweet side. Add the lower amounts of sugar and molasses if you like your sauce a little less sweet. You can always add more while you're simmering the sauce.

In a saucepan, slowly sauté the chopped onion in butter until soft and just beginning to turn yellow. Add remaining ingredients. Simmer for about 15 minutes. Taste and adjust seasonings. Delicious on chopped pork sandwiches or use with chicken.
