Rothbury Farms Black Bean Burgers

One of the most wonderful things about being a Balancing Act Community Blogger is that they like to challenge me to develop recipes with a new to me ingredient like Rothbury Farms croutons.

It’s even better when that challenge email hits my inbox after I found out about it after watching a segment on The Balancing Act and before a planned look for it at the grocery store trip.

Why? Because RothBurby Farms croutons are one of the rare brands that are transfat free, high fructose corn syrup free, hydrogenated oil free, AND are made with whole wheat flour.

As a Budget Chef, I could most certainly make my own croutons without all of the nasty stuff I don’t want my family to eat. As a Lazy Chef with real world responsibilities, there isn’t always time to do so. As a result, every burger and meatloaf I make is soupy because it lacks a trans fat free crouton binder.

Let’s change that, shall we?

Spicy Shawarma Black Bean Burgers with Rothbury Farms Croutons

Sometimes I like to make a meatless meal to keep things interesting. It’s easier on the budget and my waistline after binging on holiday cookie for the last month. I haven’t found a black bean burger recipe that truly satisfies. I decided this is the perfect opportunity to create one!

Spicy Shawarma Black Bean Burgers

2 cups cooked dried black beans or 1 16 oz can of drained and rinsed black beans
½ chopped onion
1-2 cloves minced garlic
1 egg
3 tablespoons Shawarma spices
1 cup crushed Rothbury Farms Organic Seasoned Croutons

1.Crush the croutons in a blender, food processor, or with a rolling pin in the Rothbury Farms bag. Guess which one I did? Yep. Rolling pin. OK, I really smacked the bag with the stainless steel measuring cup I pulled out of the cupboard to measure the crushed croutons. Rooting through the lower cabinet for a rolling pin was too hard. Use whatever method you like that crushes your croutons.

2. Use a potato masher to mix the black beans, onion, garlic, egg, Shawarma spices, in a large bowl while mashing the beans.

3. Mix the crushed Rothbury Farms Organic Seasoned Croutons into the bean mixture.

Optional: Allow the mixture to sit for an hour in the refrigerator to allow the Shawarma spices to marinate for a stronger flavor. I didn’t do this while I was developing the recipe and my burgers tasted great. However, the extra burgers I froze for later, tasted a bit better. Let your taste buds and cooking timeline be your guide.

4. Roll the mixture into ball and flatten it to make a patty.

5. Grill the black bean burgers or fry them in light oil on stove over medium heat.
6. Chow down!

I buy my shawarma spices premixed at a local international grocery store. Most of those little local shops have better price and selection on spices than my traditional chain grocery store. If you can’t find premixed shawarma spices for sale, use this shawarma spice recipe to make your own.

Two Ways to Digitize Your Old Photos

By far one of the most common questions we get is “What do I do with all my old photos?” Frankly, we’ve all got shoeboxes full of them too, so we went off in search of a solution. First, if you’re only looking to digitize a small batch, maybe around 100, then there are lots of inexpensive flatbed scanners out there that will do the trick. Some even scan film negatives, which is a real plus. There are also a slew of portable scanners that are better used for scanning a low number of pictures. But before you press “scan” for the first time, let’s talk dpi (dots per inch). The higher the dpi, the better quality the image will be; however, the file size will be a lot larger as well. If all you want to do is post your pictures online after scanning them, 72 dpi is the best way to go. Scanning your pictures at 300 dpi will allow you to view them in print quality and you may even be able to print them a little bit bigger than their original size. If you really want to blow things up, 600 dpi is also available, but you should be selective about what you bump up. Now, if you have hundreds, yes, with an “s,” then you may be better off having a service such as Scanmyphotos.com take care of them for you. They have high speed scanners that turn your lifetime of photo memories into 300 dpi files burned conveniently onto a DVD. Their prices are reasonable ($79.50 for 1000 photos), but there are some details you’re going to want to let Carley tell you about in the video. Once your photos are scanned, you can load them on to external hard drives or even upload them to an online cloud service such as Dropbox.com for easy storage. Sorting through your photos is also a good way to separate the good, the bad, and the ugly. Smart Systems that Work for You

When you walk into your office, do you sit down at your desk and begin your daily work with a strong sense of focus and concentration? If you said yes, well good for you!  But many of us don’t feel this way.  Instead of entering with a purpose, we get distracted and end up going in several directions, none of which proves to be productive or efficient. 

If you can relate to this and feel overwhelmed and scattered, take a serious look at your desk!

Has it become your dumping ground and covered with things to read (I know, one day you will get to relax and read it) such as newspapers, magazine articles, letters…need I go on?

First, suffice it to say, you need a system to streamline your stuff and organize your work.

So let’s begin.


Smart Sorting

Take those papers and divide them into three categories:

1. Immediate Attention

2. Look Later

3. File

Please, make it simple on yourself, throw away, shred, or recycle everything else that you have not touched or looked at in years and do not need!

Never underestimate the power of having things within arm’s reach – so now put all those immediate action items there!

Organize them so you can see them…try something that will keep them upright, such as a letter sorter. If you lay them down, it’s too risky to start piling again, hence they get buried.

Now create an area that is for your “Look Later” stuff. Find something that is colorful and will draw your eye as a reminder.

I personally like the file totes that have the detachable file inserts. It’s ideal for your magazines, papers, and catalogs and you can make bold labeled tabs for each category.

Tip: Once you see it getting full or heavy, it’s time to purge!


Clearing Your Space

I always say, you must be attracted to your tools, and a filing cabinet is no exception. Find something that you like that will compliment the style of your office. You have to feel like you want to “go” to the files.

Take the time to shop or go on-line and browse a bit. I suggest you find one with drawers that close – it helps things look less cluttered and professional.

Finally, it’s important to put like with like.  This means, no commingling your papers please. Separate your mail immediately and keep your bills in their own home. Then put the rest of the mail in the homes you already established prior – “Immediate, Look at Later or File.” Remember, now is a good time to toss, shred or recycle the rest.

Tip: If it’s been more than 2 weeks and you haven’t read your catalogs, it’s time to let them go.

Four Ways Restaurants Can Improve the Customer Experience

And what you can learn from their mistakes

It’s no secret that I really like to eat and that I spend quite a bit of time in restaurants.  However, there are four things that occur in far too many restaurants that make it clear that they aren’t totally focused on the customer.  Here are my four tips to restaurants from the customers’ perspective: 

Take (and honor) reservations:
Time is our most precious and fleeting resource.  So, I don’t want to spend it hanging out in the waiting area (or bar) of your establishment, unless that was my predetermined plan.  Make sure that you take reservations to show that you value your customers’ time and when they show up, seat them at or very near the time of the reservation.  A 7:30 reservations should not mean 7:50 seating.

Write down my damn order:
When I go to a restaurant, I am well aware that I am not in a Jedi Mind Academy.  I am not impressed by memorization skills- I am impressed when my order comes out correctly.  So, have your waitstaff write the order down the first time.  Oh, and for brownie points (and by brownie points, I mean me not sending the food back), check the food against the written order before you bring it to the table.  Double points if your staff actually knows who at the table ordered each dish!

Stop leaning over me while I eat:
This is my #1 restaurant pet peeve and ranks in my top five peeves in life.  When I am enjoying a meal, I want to enjoy a meal.  I don’t know if waiters think are helping by clearing others’ plates, leaning over me and having their dandruff fall into my meal, or if it is just their way of rushing to turn the table.  Either way, it sucks (and in many cases, it is kinda gross).  I don’t want you leaning over me or my food, I don’t want you to bump into me, I don’t want to have to “excuse you” while you rearrange crap in front of me and I don’t want everyone else to have their plates taken away and have me be the “which of these kids is doing his own thing” at the table by being the last one left with a dish in front of me.

Don’t ask if you don’t give a flying ______:
If you are the manager, host, waiter or anyone else on the restaurant staff and you come by the table to find out how things were, then you should actually care.  If I have feedback that you don’t want to hear, deal with it or don’t ask the damn question in the first place.  Or if I give a compliment to the staff, make it clear that you are glad to get it.  If you are going to go through the motions to check on the customer, then you should want to act upon feedback. 

The takeaway:  What each of these issues demonstrates is how far removed many business owners are from their customers real wants or needs.  Restaurants aren’t just about food, they are also about an enjoyable social experience.  Make sure that you look at your business from your customers’ perspective and determine what needs (other than the obvious) you are really filling for them.

Ways to combat Inbox overload

 How to protect yourself from the surge of emails, clean out your Inbox and develop better habits for 2012.

As you forge into 2012 with a gargantuan number of emails messages, it’s time to do something drastic — consider an Extreme Inbox Makeover.

Like many of you, I feel I could get much better at dealing with email. My Inbox holds a deluge of correspondence tallying up to more than 2,000 emails. Sorting through it affects my productivity — one quick peek can lead to toiling in email land for hours.

But it’s a new year and that means opportunity to start over. The experts advise we start 2012 by walking away from all prior email buildup and wiping the slate clean — sort of.

Just like cleaning out the garage, we need to purge, sort and develop better habits to prevent the mess from reappearing.

The first step is paring back. Productivity expert Audrey Thomas of OrganizedAudrey.com suggests holding onto email from December 2011 and January in our active Inbox. Then, she wants us to create a file folder for July through November 2011 and another for January to June 2011. Messages from 2010 get slid into a file folder and anything prior gets deleted, she says.

Marketing strategist Arminda “Mindy” Figueroa shivers at the thought of hitting delete. Like me she suffers from the “just in case” syndrome. She will hold on to an email in her inbox just in case she may need to reference or forward it months later.

“Right now I have 12,166 emails,” she confesses to me. “I think all are important to keep.” Figueroa, president of Latin2Latin Marketing & Communications in Fort Lauderdale, spends two hours every morning reading email from clients across the country before she even gets to the office. “I did get rid of 20,000 emails before the holidays. That’s a huge accomplishment. I’m taking baby steps to getting better.”

Thomas brings to my attention that even if we dig up an email older than 2010, it typically has outdated information. We can find more current information through Linked In or Google. And, if we’re worried about losing a contact, she suggests creating an electronic contact for categories — such as graphic designers, home contractors, etc. Also, most of us subscribe to newsletters we delete without opening. To cut back on inbox clutter, the new year is an ideal time to unsubscribe.

Of course, a makeover requires new email habits.

“Every email is decision waiting to be made,” Thomas says. “You need to become a good decision maker. When you read an email and go to the next and don’t make a decision, at end of the day you’ve read 73 emails and they are still sitting there, cluttering your inbox. Now you have to re-read them.”

Tackle email by replying on the spot to any that will take two minutes or less to address. Don’t even file them away. Just get them out of the way immediately with a brief and to the point response. Experts say half of emails can be deleted once read. Where we tend to falter is using our Inbox as a filing cabinet or to-do list, and that’s how important meetings or action steps get overlooked. Often, I rely on the search function of my inbox to track down a message from months ago. “You can cut the search time in half if you make a decision on messages right away,” Thomas says.

Productivity experts suggest using file folders. I’ve discovered that how many folders and what you name them can get extremely personal. “You need to set up something that works for YOU,” says Lorena Prime, founder of Clearly Organized. “There is no one solution that works for everybody, so you can try several ideas and see what works. Tweak your methodology until you’re happy with it and it becomes automatic.”

Tech blogger Gina Trapani uses a three-folder system. Follow-up — for messages you have to respond to or act on that will take longer than a couple of minutes. (There’s a corresponding item on her to-do list for each of these messages.) Hold — for messages that involve something she is waiting on to happen, like a package shipment or event invitation. (There’s a corresponding item on her calendar for each of these messages.) Archive — for messages she’s done with but wants to keep for reference.

Kathy Koch, president of Ambit Advertising in Fort Lauderdale, creates folders for each client, each organization she participates in and a personal and family folder. She also has a folder for newsletters or weekend reading and one for emails she may want to share. She only keeps 12 months of email in her inbox. “I’ve become much more ruthless about deleting,” Koch says.

Elizabeth Bowman, a productivity consultant who heads Innovatively Organized, has a “phone calls” folder for calls that need to be made, an “in office” folder for messages with tasks to complete at her desk, an “end of day” folder for bigger tasks and a “read later” folder for articles or newsletters that aren’t time sensitive.

Regardless of what folder system you use, maintenance is critical. Instead of constantly scanning and reacting to email arriving, process messages in batches. Then when it’s time to deal, fully commit yourself to processing new messages. Thomas says allot 10 “focused” minutes to clear your inbox and 25 minutes on Friday.

When creating folders, expert say keep it simple and purge those you don’t use anymore.

“If you create 40 file folders, you have to scroll to find the right one and you may end up leaving the message in your inbox,” Thomas says. Of course, there are filters, flags and all sorts of other tools available in the various programs to presort and mark emails BEFORE they land in your Inbox.

Thomas says your goal should be to leave work on Fridays with less than one screen full of emails. It’s still January, but I’m off to a good start — for now, my unruly inbox has been tamed.

THE STATE OF OUR UNION: Opinionated MAMA’s Perspective on “Keeping It Together”

When the honeymoon is over and the day-to-day grind of real life begins, it takes a lot of hard work to create a healthy, happy…more perfect…union. Whether we are talking about the state of our country or the state of our own marriage and family, the message is the same. We need to take time to evaluate what is working, what isn’t and figure out how to adjust accordingly. If we are in a dysfunctional relationship, it is hard to deal with any problems, big or small. Never mind an economic crisis, healthcare crisis, education crisis, natural disasters, terrorist threats and wars. It is too much. If we go into any relationship expecting it to fail, then it will fail. If we go into it committed to making it work, regardless of the circumstances or the magnitude of the problems, then we have a chance.

There has been a lot of stress on our union in the past few years. We certainly don’t need to add to the drama by “kitchen sinking” all the time. We’ve made mistakes. We need to fix them and move on.  We are a nation that is confused and scared, wondering how we racked up so many bills and let ourselves go over the years.  The things we care about seem to be upside down – from our country’s infrastructure falling apart to our own homes being under water, from the value of a dollar to our family values, from our blind faith in religious leaders to revered football coaches. We kind of feel like crap about it.

All the political bickering is not helping.  It’s like fighting in front of the kids – it stresses everybody out! We want to know that we will be o.k., that as dysfunctional as it seems sometimes, we are still committed to each other and will do whatever it takes to keep our American family strong. We want accountability and consequences for past mistakes, otherwise, how will we know you get it?  How will we know that you understand how much it hurt us?  How will we know that things can really get better?  We can pretend.  We have to be honest with each other.  And, yes, we should let each other up for the little things, but it’s so hard when we are not constructive and keep tearing each other apart.  So, for the sake of the kids, we need to get our priorities straight and remember what’s really important…for better or worse, we’re in this together.

Communication is not just about “talking,” it’s about connecting.  We can communicate with a look, a touch, a gesture, if we are truly connected. If we respect each other and trust each other, then communication is easier. Respect and trust are the foundation.  If we earn each other’s respect – if we feel it, really feel it – then trust comes and the inverse is true, too.  If we trust that our partner has our family’s best interests in mind at all times, we will respect him for it.  We might not always agree, but those shared values will get us through the toughest times.  Because, let’s face it, there will be a lot of tough times…and they can bring us closer or they will tear us apart.

Today, as we reflect on the state of our country, we will determine if the solutions presented meet our needs. Do we have the same dreams for our union? Do we have the patience to make things work for the long term, or not? Do we believe that things can really change? Will our children have a better future?

The President’s speech must translate to a happy home for our family…our American family. Because if our home is broken, figuratively or literally, then we won’t be able to focus on much else until we pick up the pieces. The bottom line is that we wake up every day and we have a choice to work on it or not. Like Abraham Lincoln once said, “A house divided against itself cannot stand.” Good advice for us as moms and for us as a nation.

Change begins at home.

There are different favorite books for each of our two girls for bedtime. Right now, each night,10-month-old Hillary gets to cuddle before her bottle with “Good Night Moon”. It was one of my favorites growing up. Josselyn gets to pick two books to read while cuddled up in mommy and daddy’s bed with us each night. Before we bring her to her room for lullabies, our favorites come from the Elephant & Piggie series by Mo Willems. “I Broke My Trunk” and “Elephants Cannot Dance” are at the top of the list. My husband, Michael, does the elephant’s voice and I read the piggie’s parts. It cracks up all three of us!”

Passion4Life Vitamins – The multi I’ve been searching for!

I’m usually the type of person who’s willing to try anything.  I tend to be a bit naïve and believe the claims made by many products.  But I’ve grown skeptical and weary about this when it comes to multi-vitamins.  They all swear they’re different but, to me, they all seem to be the same. 

So when I was sent a bottle of Passion4Life liquid vitamins I wasn’t very hopeful but I did immediately like the fact that it was a liquid.

I know through my research that absorption is a huge factor and traditional pills just don’t do it as well.  Typically only about 10% – 20% of the vitamins and minerals are absorbed from pills and tablets.  I wanted to find something that really made me feel energized so that I knew it was working.  I also wanted to find a multi that didn’t make me feel nauseous after taking it. 

Now I need to digress and tell you a bit of my back story.  Four months ago my husband was diagnosed with progressive multiple sclerosis.  This causes him fatigue and a loss of balance.  There are no drugs available to help this particular kind of MS but there are some alternative treatments which include, among them, a raw food diet high in kale and other leafy greens and Vitamin D3.  We’ve been eating healthier than ever, consuming a great deal of kale and numerous multi-colored vegetables but I’m always looking for an extra boost. 

Back to Passion4Life.  When we received it I immediately went to the website to get more info.  I was impressed that not only are there tons of non-paid testimonials from athletes but also from physicians.  I also was impressed that part of the proceeds goes towards Passion for K.I.D.S. (Kids in Desperate Situations), a non-profit that was established by the founder Charles Van Kessler. 

Passion4Life has 135 vitamins and minerals including Liposomal Resveratrol.  Resveratrol is the compound in red wine that is beneficial for heart health and anti-aging.  I still think I’d like a glass of red wine with dinner but this definitely is a nice bonus!  What really impressed me was the whole food juices from vegetables and fruits especially the kale that my husband needs.   It also has four times the amount of D3 recommended by the US RDA. 

That all sounds OK but then it came down to two things – does it work and what does it taste like?  My husband took it first.  I can tell you that he’s not a big fan of the taste.  I don’t find it too bad but I certainly wouldn’t call it delicious.  But here’s what sold me.  By that evening my husband told me he felt “different.”  I asked him to define “different.”  He said it was easier for him to move and his legs felt energized!   So huge DISCLAIMER here!  I can only relate how my husband felt.  I have no idea what effect it will have on anyone else but I can tell you he now LOVES it.  And, I can tell you that it’s also made me way more energized.  I just feel better!

I didn’t realize that kids can take this as well.  My son has ADHD and I saw that there’s an article on the site about the benefits for kids with ADD/ADHD.  It has no sugar, only stevia and agave to sweeten it.  And it’s caffeine free, gluten free and dairy free.

I never would have imagined that I would say this but we definitely have found a multi-vitamin that we love and works!
